What is Lactose?
The main carbohydrate source of milk, also known as milk sugar, is lactose. Cow’s milk contains approximately 4.5 g lactose.
What is Lactose Intolerance?
Lactose intolerance, one of the food digestive disorders, is the most common carbohydrate digestive disorder in individuals. The enzyme lactase, which is necessary for the hydrolysis of lactose, is present in the small intestine. With a deficiency of this enzyme, lactose accumulates in the small intestine and is fermented by intestinal flora to produce lactic acid, other organic acids, short-chain fatty acids, carbon dioxide, hydrogen and methane gas. This results in symptoms such as bloating, gas and cramping, nausea, diarrhea and pain.
Although milk is a rich and accessible source of protein, calcium and many other nutrients, its consumption is low in many undeveloped and developing countries of the world due to lactose intolerance. In lactose intolerant individuals, milk consumption results in the development of symptoms of digestive disorders.
The rate of lactose intolerance is 37% in Turkey.
What is Lactose-Free Cheese?
Lactose-free cheese is a type of cheese produced specifically for people who develop lactose intolerance due to the lactose content in milk. Unlike normal cheese, lactase enzyme is added to the production of lactose-free cheese and thanks to this enzyme, lactose is broken down and reduced to simple sugars that are easy to digest.
